Preheat the oven to 180 °C. Line muffin tray with muffin paper cups. Mix eggs, buttermilk, sugar and melted butter well.
Sift flour and baking powder and stir into batter along with coconut flakes.
Pour the batter into the muffin tray and bake the muffins for about 25 – 30 minutes.
Preparation Tip:
The buttermilk coconut muffins taste especially good if you mix some candied pineapple pieces into the batter.
