For the maki with shrimp, cucumber and shiitake, first prepare the sushi rice according to the basic recipe.

Soak shiitake in water and then cut into strips. Remove seeds from cucumber and cut into 1/2 cm thick strips. Cut shrimp into strips as well.

On a bamboo mat, first place a nori sheet. Spread the rice thinly on top, but leave a border. Place a row of shrimp, cucumber and shiitake on top. Roll up using the bamboo mat, folding tightly.

Cut the rolls diagonally into 3 to 4 equal pieces and arrange the maki with shrimp, cucumber and shiitake.
