Heat the milk. Stir in the cheese and simmer the sauce for about 10 minutes. Clean the leek, rinse and cut into thin rings. Wash, dry and cut the fish into 4 pieces. Sprinkle with juice of one lemon and season with salt.

Grease an ovenproof dish and fill it with the fish. Spread the leek and the cheese sauce evenly over it. Season with pepper. Bake in a heated oven (electric oven 225 °C /gas mark 4) for 25-30 minutes.
