For Eggs Benedict first prepare the hollandaise sauce.
To do this, heat butter, whisk egg yolks, juice of one lemon and cayenne pepper with a hand mixer for 5 seconds. Slowly add the hot butter, stirring constantly. Set sauce aside, covered, and keep warm.
Heat the butter in a frying pan and lightly brown the ham slices in it.
Poach the eggs and serve with the ham slices and hollandaise sauce.
Preparation Tip:
The Eggs Benedict can be garnished with red caviar to taste.
