A delicious mushroom dish for any occasion!

Prepare fresh mushrooms (ready to cook, e.g. peel, remove woody parts and dirt), rinse (only if necessary), cut in half, sprinkle with lemon juice. Drain the egg sponges.

Soak morels for ten minutes, squeeze well.

Melt clarified butter, sauté shallots, add mushrooms, season with salt and pepper. Steam at a good temperature for about fifteen minutes, until there is almost no clear soup left in the pan.

Pour port wine over it. Remove lid, boil wine a little bit. Remove from heat. Add cream, to taste.

The soup can be served with porcini mushrooms or bovine mushrooms. Port wine can be replaced by red wine.

It goes well with: Pasta, long grain rice.
