Mix cane sugar with rye flour and wheat flour.
Warm the honey slightly, beat the eggs in it and mix with the flour-sugar mixture and Kotányi baking soda and Kotányi gingerbread spice to make a smooth dough.
Roll out the dough not too thin and cut out shapes.
Place on a baking tray lined with baking paper, brush with egg and top with almonds or nuts as desired.
Bake at 180 °C until golden brown, let cool and store in tightly closing tin.
