Cut the vegetables into fine cubes, chop the garlic and the chili pepper very finely. Mix the stock, vinegar and oil into a marinade and season with freshly ground sea salt, sugar and chopped parsley. Place the vegetables except the chili pepper in a bowl, pour the marinade over them and let sit for at least 1 hour. Before serving, mix in more or less chili as desired.
