The original Obatzte from the Bratwurstglöckl:
For “foreigners” and those who do not yet have a perfect command of the Bavarian language, the UEbersetzung is given immediately: Angebatzter, even more genteel expressed: mixed together or dressed cheese.
The preparation for the 1st recipe:
Mash Gervais and butter with a fork and fold in the spices together with an egg yolk.
With curd cheese (curd cheese, white cheese) it works just as well, of course.
A variation of this is the Obatzte with Camenbert:
The preparation for the 2nd recipe:
The Camenbert is mashed with a fork, mixed well with the butter, the finely chopped onion and the spices. It is served with salted sticks or eaten on strong brown bread.
