For almond pudding, first lightly toast the almonds in a non-stick pan, tip onto a plate and allow to cool. Finely dice the apricots and mix with the orange juice. Grease a baking dish with a little butter and sprinkle with flaked almonds.

Mix 50 g butter, half of the sugar, the vanilla sugar and the orange zest with a hand mixer until very creamy. Separate the eggs. Stir in the egg yolks a little at a time.

Mix in almonds, rusk crumbs and apricots. Beat the egg whites with salt until stiff, add the remaining sugar and continue beating. Gradually fold the snow into the almond mixture.

Pour the mixture into the mold, cover with cling film and cook the almond pudding at 100 °C for 30 minutes.

Preparation Tip:

Serve almond pudding sprinkled with powdered sugar.
