Instructions:

Preheat the oven to 180 °C for the plum cake. Separate the eggs and beat the egg yolks with the sugar and vanilla sugar until foamy.

Then stir in melted chocolate pudding powder, water and oil (if you like it even more chocolatey, add 1-2 tablespoons cocoa powder) and stir in the flour mixed with the baking powder.

Finally, beat the egg whites until stiff and fold in. Pour the dough into a baking tray lined with baking paper and spread. Remove the seeds from the plums and either cut them in half or cut them into even smaller pieces, depending on your taste.

Sprinkle with a little cinnamon and bake in the preheated oven for about 15-20 minutes (needle test). If you like, you can immediately spread the hot cake with warmed apricot jam (possibly mixed with a dash of rum).

Otherwise simply sprinkle with a little powdered sugar before serving.

Preparation Tip:

Instead of chocolate pudding powder, you can also use vanilla pudding powder for the plum cake.
