Peel and finely slice or shave the beet. Mix with half a teaspoon of salt and sugar and leave to marinate for about 30 minutes.
Finely chop the bread or grind it finely in a food processor. Then mix with the honey and olive oil. Season well with salt and pepper.
Place the cheese on a baking tray and sprinkle with the bread.
Warm the cheese in the oven at 160 °C for about 3 minutes. In the meantime, marinate the salad. To do this, mix the remaining ingredients into the beets and season well with salt and pepper.
Arrange the beets on a plate and place the cheese on top. Garnish the beet salad with lukewarm goat cheese with fresh tarragon.
Preparation Tip:
The beet salad with lukewarm goat's cheese tastes even better if you replace one of the 3 tablespoons of olive oil with a fine nut oil. This gives this salad a nutty aromatic note.
