For the apple-carrot dessert, peel and grate apple and carrots, mix with lemon juice and possibly powdered sugar or sweetener (not always necessary).
Place a broken biscuit in each of 4 bowls, layer the apple-carrot mixture on top, top with chopped walnuts roasted without fat and place another biscuit in each bowl.
