For the Ennstaler Steirerkasnockerl, mix the flour with the egg, salt and water until the dough is nice and sticky.

Bring a pot of salted water to a boil and either spread the dumplings into the water with a spaetzle board (the dough must be a little more liquid for this), or place the dough on a board and spread small dumplings into the water with a knife!

When the dumplings float to the top, take them out and let them drain. Cut the onion and fry in a little oil until transparent. Then add the dumplings, sprinkle the Steirerkas on top and season with salt and pepper.

Fry until the cheese is brown and crispy. Finally, sprinkle in some parsley and serve.

Preparation Tip:

You can also use other cheese, then it is simply Kasnockerl. The Steirerkasnockerl are best served with fresh lettuce and seed oil.
