For the coffee balls, separate the eggs. Mix egg whites, sugar and mocha and beat in a water bath until firm. Remove from the water bath and continue beating until the mixture has cooled down.

Place the wafers on a baking tray lined with baking paper and spread the mixture onto the wafers in small portions using a piping bag. Leave a small rim of wafers around the mixture – the Busserln will still separate when baked. If you don’t have any wafers at home, you can also spread the mixture directly onto the baking paper.

Bake the coffee balls at about 150°C for about 30 minutes.
