Apple Celery Soup with Scallops

Instructions:

Remove the skin from the apples, cut into quarters, core and cut off. Soften in the apple juice on the kitchen stove. Clean and cut all other vegetables. In a large saucepan, melt the butter and sauté the vegetables in it. Season with salt and sugar. Pour in the chicken soup, reduce the heat and simmer with the lid on for about 40 minutes. Remove the lid, increase the temperature again and add the whipped cream and crème fraîche. Cook for 20 minutes. Add the applesauce and then whisk with a blender.

Strain through a fine sieve. Season to taste with lime juice, sugar, salt and lime oil.

Sauté the scallops just briefly in a frying pan (about 1-1 ½ min. per side) and arrange in soup plate. Pour in hot soup. Garnish with chives and pine nuts.

Tip: If you don’t like scallops, you can use North Sea shrimp or scampi just as well.

Our tip: Fresh chives are much more aromatic than dried ones!
