Instructions:

First, mix flour and salt in a bowl. Add butter in flakes, work with your hands until everything is evenly crumbly together.

Add water, knead briskly into a dough and let rest in the refrigerator for half an hour.

Roll out the dough, grease a pie dish or possibly a cake springform pan (diameter 24 cm) and spread the dough in it. Form the edge and prick the dough a few times with a fork.

Clean the spring onions, cut into very fine rings. Grate cheese and spread on the dough base together with the onion rings.

Cut asparagus in half if desired, place on top. Cut cheese into small cubes and also spread evenly over the top.

Mix all ingredients for the glaze well, pour over the asparagus, sprinkle with pine nuts.

Bake the quiche at 170-190 °C convection oven for approx. 45 minutes.
