Instructions:

For autumn pumpkin and lentil soup, first chop onion, garlic, ginger. Remove seeds from pumpkin and cut into small pieces.

Heat pot with olive oil. Saute onion, garlic and ginger until translucent. Add pumpkin and curry. Rinse lentils and add.

Pour vegetable soup into pot, bring to a boil and then cook over medium heat for about 20-25 minutes. Once vegetables are cooked through, puree with a hand blender.

Fry the pumpkin seeds briefly in a pan. Season with pepper and salt. Add a dash of milk if needed.

Garnish with cilantro and serve the autumnal pumpkin-lentil soup with a dash of pumpkin seed oil.

Preparation Tip:

Possibly serve pretzel sticks as a side dish to the pumpkin-lentil soup.
