For the avocado paste, cut the avocados in half and remove the stone. Remove the flesh with a spoon and place in a tall measuring cup. Add lime juice, pine nuts, garlic clove, mint leaves, olive oil and salt.

Blend with a hand blender until smooth. Season to taste with salt and pepper, if desired.

Preparation Tip:

The avocado paste can be spread on ciabiatta or baguette like a pesto and served that way.
