Instructions:

Preheat oven to 170 °C hot air.

Separate the eggs. Cream butter with 2/3 of the sugar. Separately, beat in the egg yolks and add the vanilla sugar, rum and spice.

Sift the flour with the baking powder and mix with the chopped nuts, the chopped chocolate and the grated apples. Mix the two masses only briefly.

Beat the egg whites with the rest of the powdered sugar and a pinch of salt until stiff and fold in carefully.

Grease the cake pan with butter and dust with flour. Pour in the mixture and bake for about 1 hour.

Let cool for a few minutes and then turn out of the mold.

If desired, sprinkle with a cinnamon and powdered sugar mixture or coat with a chocolate glaze.
