For the baked apple jam with cinnamon and nuts, brush apples with oil and roll in granulated sugar or sprinkle well with sugar. Place on a baking sheet and roast with cinnamon bark in a preheated oven at 250°C for about 45 minutes until apples are nice and soft. Strain the apples (yields approx. 2.4 kg of puree), boil briefly with sugar and gelling agent according to instructions or with jelling sugar and lemon juice.

Brown walnuts in the oven, grate and stir into the applesauce. Season with a little cinnamon and fill the jam into clean glasses while it is still hot. Store the baked apple jam with cinnamon and nuts in a cool, dark place.

Preparation Tip:

If the apples are rather dry and not juicy, you can stir in some additional apple juice after straining or during cooking. The baked apple jam with cinnamon and nuts is also very good as a filling for pancakes, pies and roulades.
