For the baked apple pascherln with caramel sauce, first mix the spices together. Knead the marzipan and nuts well.

Cut the apples in half widthwise and cut out the core. Rub with the spices and fill with the marzipan-nut mixture. Place the four apple halves in an ovenproof dish and bake in the preheated oven at 200 °C for about 30 minutes. Allow to cool.

Cut the puff pastry into rectangles. Place one apple half in the center of each puff pastry piece and fold the pastry over the apples. Brush with the beaten egg. Place the wrapped apples on a baking tray lined with baking paper and bake at 170 °C for about 20 minutes.

In the meantime, prepare the caramel sauce. To make it, caramelize the sugar in a wide saucepan, add the butter, let it foam up briefly and deglaze with the apple juice. Simmer until the sugar has dissolved. Pour in the cream and simmer for another 5 minutes to form a thick sauce.

Divide the caramel sauce among four deep plates, place the fried apple pascherln in them and garnish with fresh mint.
