Instructions:

Preheat the oven to 180 °C.

Beat the eggs with the powdered sugar, vanilla sugar and a pinch of salt in a mixer until very foamy. Cut dates into small cubes, crumble speculaas and stir into the egg mixture with the oat flakes and a pinch of cinnamon.

Wash apples, if necessary cut the bottom thinly so that the apples stand better. Using a Parisienne cutter (or a small spoon), carefully cut out the core from the top and hollow out the apples.

Fill with speculaas mixture, place apples in an ovenproof dish and bake for about 20 minutes.

Bring apple juice and white wine with granulated sugar to a boil, steep mulled wine spice mixture in it for about 10 minutes, remove bag and reduce liquid to a good quarter, then let cool.

Serve the baked apple with the mulled wine reduction.
