Instructions:

Make a yeast dough from flour, yeast, milk, sugar, salt, lemon zest, egg and butter.

Cover the dough and let it rest for half an hour.

Then knead the dough briefly and form 8 dumplings, place them spaced apart in a large greased gratin dish. Leave to rise in the oven for 15 – 20 minutes at 50 °C.

Warm the milk slightly, mix with sugar and butter, pour over the dumplings.

Turn the stove to 200 °C and bake the dumplings on the bottom rack for 30 – 35 minutes.

Turn off the heat and let the dumplings rest for another 5 – 10 minutes.

Serve the Buchteln as desired.

Preparation Tip:

Serve the Buchteln warm with vanilla or wine cream sauce.
