For the baked porcini mushrooms with herb dip, clean and wash the fresh porcini mushrooms. Then cut the porcini mushrooms into thick strips. If you have frozen porcini mushrooms, do not thaw them, but bread them while they are still frozen.

Whisk eggs with salt and pepper, then place in a container with a lid. Dredge porcini in flour and then gently toss in the container with the egg mixture. Also add breadcrumbs to a bowl with a lid and shake the mushrooms in the bowl.

This saves time and you can bread several porcini mushrooms at once. Then fry the mushrooms in breadcrumbs in a pan with hot butter and oil on both sides until golden brown.

Then drain on kitchen paper. For the herb dip, season sour cream with salt, pepper, garlic and herbs of your choice.
