For the gnocchi, boil potatoes, rinse and peel. Whisk yolks and place on a work surface with flour.
Press potatoes through a potato ricer onto flour-yolk mixture. Melt butter and add. Salt and work into a dough with wet hands.
Form thin sausages and cut into pieces with a knife. Cook the gnocchi in salted water.
