Onions cut into fine strips, garlic cloves chopped and plucked rosemary mix casserole or roaster with lid brush with oil. Sprinkle a layer of onion-garlic-rosemary mixture over the bottom of the casserole and season with beef juice. Then layer: alternate meat and onion-garlic-rosemary mixture until used up.

Pour Guinness (dark beer) on top. Close roaster. Steam meat at low temperature for about 90 min. To serve, pour off the resulting beer sauce into a roasting pan. Bring to a boil.

Add tomato ketchup.

Season with salt & pepper. Pour boiling hot over the Saftplätzli.
