For the beet salad boil beet in water until soft, takes about 1 hour, then peel and cut into small cubes.
Boil vinegar with a little water, salt, sugar and caraway seeds and pour over the beets, let marinate, stirring often.
Just before serving, sprinkle the horseradish on top.

The beet salad can be made with more or less horseradish.
