Instructions:

For the beetroot risotto with feta, chop beet into small cubes. Peel and finely dice onion and garlic and sauté in hot butter until colorless.

Add rice and stir well until completely coated with butter. Deglaze with white wine. Add bay leaf and allspice. Pour in 1 glass of vegetable soup and bring to a boil. Once the rice has absorbed the liquid, keep adding a little soup.

After approx. 10 min. cooking time add beet to the rice. After approx. 20 min. the risotto is done. Meanwhile, wash basil and cut into strips. Crumble feta.

Season the beetroot risotto with salt and pepper and fold in the basil strips. Sprinkle with feta when serving.
