Instructions:

For the berry fruit tart, first prepare the oil cake mixture. For this, beat the egg whites until stiff. Beat the yolks with the sugar until foamy and slowly add the oil and water and continue beating.

Mix the flour with the baking powder and fold into the yolk mixture together with the beaten egg whites. Bake the mixture for about 45 minutes at 180 degrees.

For the cream, mix the yogurt, curd and sugar. Prepare the gelatine according to the instructions on the packet, stir into the cream and add the whipped cream.

Cut the cooled cake twice horizontally, enclose with a cake ring and spread half of the cream on the first layer.

Sprinkle half of the raspberries on top and place the middle cake layer on top of the cream. Do the same with the rest of the cream and the raspberries and finish with the last cake layer.

Finally, let it set in the refrigerator for a few hours. Then spread with the whipped cream, dot the edges and decorate with various berries.

Finally, decorate with mint leaves.

Preparation Tip:

The fruit tart can be made either with a mix of berries or with only one kind of berries. Also grapes or other fruits can be used for this fruit tart according to the season.
