For the Blueberry Pancakes, first mix the dry ingredients together. Combine the remaining ingredients (except blueberries) and then mix with the flour mixture. Let rest for a few minutes.

Meanwhile, wash and dry blueberries, then add some of the blueberries to the batter and mix. Heat a little oil in a frying pan.

Pour the batter in portions (small ladle) and spread into circles – you can fit two to three circles in the pan. Fry on both sides over medium heat.

Roughly mash the remaining blueberries with a fork and mix them into the very last bit of batter, bake everything in the pan as well, put it on the pancakes and finally pour maple syrup over it.

Preparation Tip:

Serve the Blueberry Pancakes as a dessert with vanilla ice cream.
