For the borage soup with potatoes, remove the coarse leaf veins from borage leaves and cut into fine strips. Peel the potato and cut into coarse cubes (if necessary, put the potatoes in cold water so that they do not turn brown).

Mix the whipping cream with the yolks. Prepare a light preserves in a soup pot with butter and flour and pour in cold soup. Stir with a whisking rod and boil until smooth. Add potato to soup, cook on low heat until soft, blend finely and season with salt and pepper. Add borage strips and simmer over low heat for about 5 minutes.
