For the cherry tart, prepare a short pastry from the ingredients and place in a tart pan. Bake for 15 minutes at 220 °C.

Beat the egg whites until stiff. Mix flour with starch flour.

Now cream butter, half of the sugar, lemon zest and salt. Stir in the yolks and then fold in the snow and flour.

Grease the edge of the cake tin. Spread the mixture on the short pastry base and spread the cherries on top. Bake the cherry tart for 60-70 minutes at 190 °C.
