For the Chinese tofu vegetable soup, peel and finely chop the garlic and ginger. Clean the vegetables, tear the carrots into small pieces and cut the green onion into thin rings. Cut the spinach into pieces.

Drain the bean sprouts and cut the tofu into small sticks. Salt the spinach and cook in a saucepan over high heat until combined, about two minutes.
