For the coffee-chocolate cream, mix the cornstarch with about 6 tablespoons of milk until well blended. Beat the egg whites with a tablespoon of sugar until stiff.

Bring the mocha and milk to the boil, melt the chocolate in it. Pour starch-milk mixture into boiling liquid while stirring. Stir and cook until it reaches a creamy consistency (1-2 minutes).

Remove from heat and add remaining sugar first, then fold in beaten egg whites. Pour the cream into glasses and chill for about 30 minutes.

Whip the cream and serve the coffee-chocolate cream with whipped cream and chocolate chips.

Preparation Tip:

Instead of the coffee-chocolate cream, you can omit the chocolate without substitution for a mocha cream, for example. For a coffee-caramel cream, replace the chocolate with 1 tablespoon of caramelized condensed milk.
