For the coffee roulade, first prepare the sponge dough according to the basic recipe. After baking, roll it up with a clean, dry tea towel and let it cool.

In the meantime, for the cream, mix all the ingredients and bring to the boil in a saucepan, stirring constantly, and allow to thicken until the cream has the consistency of a pudding. Remove from the heat and allow to cool. Then stir in the butter.

Carefully roll out the sponge dough again, spread the cream on top and roll up the roulade again.

Serve the coffee roulade.
