For cooked leg meat, first halve the onion, peel and coarsely dice the carrots, yellow beets and parsley roots. Wash and coarsely chop the leek.
Put the vegetables in a pot with the meat, bones and spices. Pour in water so that everything is covered. Bring to a boil, then turn down the heat and simmer the leg meat for about 2 hours. Keep skimming off the foam in between.
Lift cooked leg meat out of the soup and cut into slices.
Preparation Tip:
Serve cooked leg meat with side dishes of your choice. This goes very well with potatoes and vegetables.
