Instructions:

Finely chop the onion and sauté until translucent, add the white parts of the cleaned leek. Sauté for five minutes, mash.

Add wine, beef broth, puree and cheese and simmer on low heat until cheese is melted.

Fold in whipped cream, add a few green leek rings and bring to a boil again. Season to taste, garnish with toasted bread cubes and chives.

Our tip: Fresh chives are much more aromatic than dried ones!
