Instructions:

Cut onions, fennel, bell bell pepper and garlic into thin strips and sauté in canola oil. While doing so, caramelize with sugar.

Now stir in first tomato paste, then the paprika powder.

Deglaze with the dry white wine. Add fish stock and bring to the boil once.

Now season to taste with salt and pepper.

Test: If the soup is too sweet, counteract with white balsamic, if the soup is sour due to the white wine, add sugar.

Now add the fish pieces and do not let them boil anymore, only simmer.

Attention: Do not stir the fish soup anymore, otherwise the fish pieces will not stay whole but disintegrate.
