Instructions:

For the duck saté skewers, first prepare the seasoning paste. To do this, coarsely divide the garlic, cut the onions into wedges, halve the chili peppers, remove the seeds and cut into strips. Cut the ginger into strips. Now finely crush the chili peppers with onions, garlic, lao powder, ginger, turmeric, coriander, pepper, cashew nuts, shrimp paste, nutmeg as well as cloves in a mortar (or puree in a blender).

Heat some oil in a pan and sauté the paste for 5-7 minutes, stirring constantly, until it has developed its full flavor. Remove from heat and let cool. Meanwhile, slice the duck meat very finely with a sharp knife or chop it finely with a chopping knife. Chop the kaffir leaves very finely, halve the chili peppers, remove the seeds and also chop finely.

Moisten dried coconut flakes with a little water and knead. Now mix the duck meat well with the seasoning paste as well as chili, kaffir leaves, coconut flakes, sugar, salt and freshly ground pepper. Cut off some of the mixture, form it into a small loaf and press it around the lemongrass or saté stick. Continue until all is used up.

Grill the duck saté skewers on the grill (charcoal or electric grill), turning several times.
