In an earthenware or glass jug, mix the juice of one lemon, fruit vinegar, water, sugar and honey.

Cut the thick stems of the flower umbels into small pieces and immerse the flowers in the liquid.

Cover the saucepan with a dishcloth and put it in a warm place, preferably in the sun. Depending on the heat, the liquid will start to ferment after 3-4 days.

So that the flowers do not mold on the surface, they must be dipped daily with a spoon into the sour liquid.

At the latest after a week you can drink the sparkling wine, transfer it to bottles, cork and wire.
