Crumble the feta. Remove the thyme leaves from the branches and sprinkle over the cheese with coarsely ground pepper.

Mix the juice of one lemon, soup or water, a little salt and the olive oil to a sauce. Drizzle over the cheese and let sit briefly.

Halve or quarter the cherry tomatoes according to size, seed and dice the stem tomatoes. Season lightly with salt. Cut beautiful green of the spring onions into narrow rings, chop the white coarsely. Coarsely chop the parsley as well.

Mix all these prepared ingredients with the cheese before serving.

Serve with baguette or pita bread.
