Instructions:

For the fried potatoes, peel the potatoes and cut into bite-sized pieces.

In a saucepan, bring salted water to a boil and cook the potato pieces in it for 7 minutes.

Drain the potatoes and return them to the saucepan. Swirl the pieces in the cooking pot to roughen the surface.

While the potatoes are cooking, cover the bottom of a baking dish with olive oil and heat in a 220 degree/hot oven.

Add the roughened potato pieces to the hot oil and toss to coat. Bake for 45 minutes at the same oven setting.

After half the time, turn the potatoes once and finish baking.

Remove the baked potatoes from the baking dish, drain and salt well.

Fried potatoes are a great accompaniment to dishes served with sauces, such as peppered cream schnitzel.
