The gnocchi are typical Italian. It is a dish prepared with or without eggs, from semolina, sometimes also from potato dough or choux pastry. Gnocchi, which means dumplings, are served with meat and fish dishes.

Grease trays with light butter.

Heat the milk in a saucepan and add the semolina. Season with salt, pepper and nutmeg. Cook for 10 to 15 minutes, stirring gently. Remove the saucepan from the stove. Stir in two thirds of the Parmesan cheese. Spread semolina mixture on the spot 2 cm thick on a greased baking sheet. Cool. Cut out half moons or diamonds. Place on another greased baking sheet. Brush with beaten egg yolk. Sprinkle with remaining cheese.

Place in the heated oven on the middle shelf and bake for 15 minutes at 200 degrees (gas: level 4). Take out. Bring to the table hot.
