For green curry with cod first preheat the oven to 180 °C. Cover a baking tray with aluminum foil and brush it with oil.

Cut one lime into slices. Salt the cod fillets and place them on the baking tray. Place the lime slices on top. Roast in the oven for about 10-15 minutes.

In the meantime, prepare the curry. Wash and thinly slice the carrots, zucchini and cucumber. Wash the cocktail tomatoes. Cut the pea pods in half. Remove seeds from chili peppers and chop finely. Squeeze the juice of the second lime.

Heat some oil in a pan and fry the tomatoes first, then add the pea pods, zucchini and chili. Pour in coconut milk and add lime juice. Stir in curry paste. Just before serving, add carrots and cucumber to keep them crunchy.

Serve green curry with cod.
