For the salad with Sacher house dressing, mix Madeira with cognac, port wine, both types of vinegar, chicken stock, both types of oil, mustard, sugar and the spices.

Mix the herbs into the dressing and let it stand covered for 2-3 hours. Then strain, taste and season as needed. Chop well-cleaned lettuce a bit and mix well with some of the marinade.

Pour remaining marinade into screw-top jars and store in refrigerator until ready to use, where it will easily keep for about 14 days. Before use, mix well, take out some and let it reach room temperature.

Preparation Tip:

Be careful not to use too much marinade. Lettuce that floats quickly loses its crunchiness and tastes lukewarm. The salad with Sacher house dressing can still be supplemented with other ingredients as desired.
