For the green spelt and bear’s garlic loaf, bring the vegetable soup to the boil and sift in the green spelt meal. Bring to a boil, remove from heat, cover and let swell for 40 minutes.

Finely chop the onion and roast in a little butter until golden. Rinse wild garlic leaves with cold water, spin dry and chop finely. Stir egg and curd and mix with the remaining ingredients. Shape into loaves with wet hands. If the mixture is too thin, add bread crumbs.
