For the green spelt spread, bring clear vegetable soup to a boil with bay leaf spice. Add the green spelt flour and bring to the boil again. Bring to a simmer over low heat for 15-20 minutes.

Add the drained carrots and heat in the soup. Mix egg yolks with crème fraîche and thicken the carrot and gruel cream with it. Season with juice of one lemon, salt and freshly ground pepper. Whip the cream until stiff.

Finely chop the parsley. Fill the green spelt spread into bowls and decorate each with a dollop of whipped cream and a little chopped parsley.

The grain needed for the Grünkern spread (green spelt) is an unripe spelt! Vary your wholefood cuisine with spelt and green spelt!
