Preparation (about 45 min):

Put the flour in a suitable bowl, add the eggs, a little bit of water, a little bit of oil, season with nutmeg, salt and pepper. Mix to a strong dough and beat until it bubbles.

Cut the sausages into slices. Peel and dice the vegetables and make a vegetable soup together with the peelings and cuttings in half a liter of water.

Sauté the onions in hot olive oil*, add the diced vegetables and garlic, sauté lightly*, pour in the strained vegetable soup and let it boil. Add the lentils and the sprig of thyme, simmer on low heat.

Add the lovage, remove the thyme and season with salt and pepper. Add the sausages at the last moment to warm, stir in the chives.

Prepare bubbling, lightly salted water. Pour the spaetzle dough through a moistened perforated sieve, bring to the boil once and remove with a skimmer. Arrange in a baking dish.
