Instructions:

Peel and chop the onion and garlic clove. Heat oil in a saucepan. Stir-fry onion and garlic with coriander, cumin and ginger.

Add strained tomatoes and vegetable soup. Season with sambal oelek, salt, vinegar, lime juice and sugar. Rinse coriander and chop coarsely. Serve the tomato soup with a little coriander and a tablespoon of crème fraîche on each plate.
