Instructions:

For the Kaiserschmarren, in a bowl beat egg whites with granulated sugar until stiff. In another bowl, whisk milk, flour, egg yolks, lemon juice, rum, vanilla sugar and a pinch of salt until smooth. Fold the snow into the batter.

Heat some butter in a large ovenproof pan and pour in the batter. First brown on the stove, turn and then bake on both sides in the preheated oven at 180 °C until brown.

Remove pan from oven and tear dough into small pieces with two forks. Mix in raisins, sprinkle with granulated sugar and caramelize again briefly in the tube. Sprinkle with powdered sugar and serve.

Preparation Tip:

Kaiserschmarren is served with plum or elderberry roast, compotes and/or vanilla ice cream.
